What are PEANUT NOODLES?
This dish combines noodles (of any kind) and tender chicken breast bites drenched in a creamy sauce inspired by Thai Peanut Sauce. The sauce consists of coconut milk, peanut butter, spicy Sriracha sauce, ginger and garlic, soy sauce, brown sugar, and a dash of lime juice. It is so delicious that you will want to pour it on everything!
Can I substitute the chicken?
Absolutely! You can substitute the chicken with tofu cubes or shrimp or leave it off and eat your noodles plain. The sauce is the main attraction. 😉
How are the LEFTOVERS being used?
If the sauce is stored in the fridge, the noodles absorb it. Indeed, I wouldn’t refuse a plate of noodles after they’ve been reheated, but the sauce and creaminess would be less. If you are a texture lover, a half-batch might be better than relying on leftovers.
