What are PEANUT NOODLES?

This dish combines noodles (of any kind) and tender chicken breast bites drenched in a creamy sauce inspired by Thai Peanut Sauce. The sauce consists of coconut milk, peanut butter, spicy Sriracha sauce, ginger and garlic, soy sauce, brown sugar, and a dash of lime juice. It is so delicious that you will want to pour it on everything!

Can I substitute the chicken?

Absolutely! You can substitute the chicken with tofu cubes or shrimp or leave it off and eat your noodles plain. The sauce is the main attraction. 😉

How are the LEFTOVERS being used?

If the sauce is stored in the fridge, the noodles absorb it. Indeed, I wouldn’t refuse a plate of noodles after they’ve been reheated, but the sauce and creaminess would be less. If you are a texture lover, a half-batch might be better than relying on leftovers.

Ingredients

Peanut Butter Natural Smooth 1/3 Cup ($0.40).

2 Tbsp sriracha ($0.23)

2 Tbsp Brown Sugar ($0.08)

Fresh limes (2 Tbsp of juice) (0.59)

1 Tbsp soy sauce ($0.06)

One clove of minced garlic ($0.08)

1 tsp freshly grated ginger (0.10)

1 13.5oz. can coconut milk ($2.99)

One boneless and skinless chicken breast (about 2.3 lb. ($3.33)

1 Tbsp of cooking oil ($0.04)

Eight oz. noodles* ($0.89)

1/4 cup chopped peanuts (0.19)

1/4 cup chopped cilantro ($0.22)

Instructions

First, prepare the peanut sauce. In a large bowl, combine the peanut butter with the sriracha sauce, brown sugar, lime juice, 2 tablespoons of soy sauce, minced garlic, and grated ginger.

Stir the sauce until it is smooth. Add the coconut cream to the sauce.

Cut the chicken breasts into pieces of 1/2 inch to 1 inch in size.

A large skillet should be heated on medium-high. Add the cooking oil to the pan and swirl it around until the entire surface is coated. Add the chicken to the skillet and cook until it is browned all over. Take care not to overcook your chicken.

Stir to dissolve all browned bits from the bottom of your skillet. Add the peanut sauce to the skillet and turn down the heat to medium-low. While you prepare the noodles, let the chicken simmer with the sauce on low heat, stirring it occasionally.

Drain your noodles in a colander after cooking them according to the instructions on the package.

Add the cooked, drained noodles, chicken, and peanut sauce to kill. Toss everything until it is coated with sauce and evenly mixed.

Enjoy! Top with peanuts and cilantro.
